Idaho Falls, Idaho is the largest city in Eastern Idaho, with a population of about 56,000. It got its start as Taylor's Crossing near the wooden bridge that at that time crossed the Snake River, built by one Matt Taylor to serve the growing number of settlers moving west. It later became known as Eagle Rock and was finally incorporated as Idaho Falls when the citizens of the town wanted to commemorate the rapids that passed under the bridge. Curiously, there were no falls at the time but years later a hydroelectric power plant was built nearby that did indeed transform the rapids into a falls proper. In 1895 the largest irrigation project in the world of that time was commenced to feed Snake River water to the surrounding crops which included sugar beets, peas, grains, alfalfa, and of course potatoes.
